Cottage cheese with peas - Recipes from India

I am in the mood for food this week and so I thought I will share some of the delectable recipes from India made with the principle ingredient - cottage cheese...
Indians are infact very much in love with cottage cheese which is called paneer here. It can be purchased from shops and also made quite easily at home. All you have to do is boil some milk, and add a few drops of lemon or vinegar into it. Once the cheese and water separate, seive using a musling cloth or a fine strainer. The solid left after the water is removed completely is the cottage cheese.
Today, a famous recipe I'll be sharing is that of cottage cheese with peas. It is called matar paneer and immensely popular. I am giving the microwave version for easier cooking. So try this and let me know if you too get charmed by the tasty paneer.
Matar Paneer ( Cottage cheese with peas)
Ingredients:
6"-7" round dish or 2" high with cover
100g cottage cheese - grated
1 cup shelled peas
2 tbsp. oil
1 medium size onion
1-2 green chillies
1/2" piece ginger
6 tbsp. tomato puree
1/4- red chilli powder
1/2 tsp. cumin powder
Cashewnuts - optional
Salt to taste
Preparation:
Grind together onion, green chillies, ginger and fry this masala for 4 to 5 minutes in a non-stick pan.
Add tomato puree, cumin powder, peas and sprinkle 1 tbsp. water.
Now transfer this to a microwave oven dish and microwave high for 3 minutes.
Add salt, grated paneer 5 tbsp. water and cashew nuts and mix gently.
Cover the dish and again micro wave for 2 minutes and stand for another 2 minutes.
Serve, garnished with fresh coriander and green chili.
