Sadya - Typical Kerala Feast

In main functions or celebrations at homes in Kerala (Southern part of India), Sadya is prepared which contian Steamed Rice, Sambar, Aviyal, Olen, Thoran, Kalan, Pachadi, Achar, pappadam, Rasam and finally Payasam or Prathaman,(a delecious sweet dessert cooked in milk or jaggery). Sadya is served on a banana leaf. Every dishes are prepared with different types of vegetables and using differnt spices.

Kerala Sadya



There are certain rules for serving Sadya. Normally people do not use tables and chairs to take sadya. They sit on the floor. First Cleaned Banana Leaves are put in front of the people. Then, Achar, Pappadam, Thoren Olen and Aviyal are served in the leaves, then the Rice and Sambar. Above dishes are again served if required by the people. In between Butter Milk also served. Rasam is served at the end of Sadya,but before serving Payasam because it is the best for digestion.

Rice

Plain Steamed rice is usually taken as the basic ingredient in Sadya with other side dishes prepared using vegetables.

Sambar

Drumstick, tomato, pototato, onion are used for its' preparation with spices like turmeric powder, chilly powder, coriander powder etc..

Aviyal

Vegetables used for preparation of Aviyal are Pumpkin, drumstick, potato, mango, jackfruit, green banana, green chilly etc with coconut sauce and curd.

Thoren

cabbage with coconut, green chilly and mustard seed are either fried or steamed and adding spices like turmeric. Thoren of Green Bananas, Green Papayas and beans are also prepared.


Olen

Olen contain beans and gourds and several spices

Kaalen

Made using Green Banana and curd mixed with coconut paste and green chilly.

Pachadi

Green Mango or Pumpkins or Gingers are used alongwith Curd, Green chilly etc.

Rasam

Rasam contain tamarind, lemon, tomato, lentils, pepper etc..

Prathaman or Payasam as sweet

There are verious types of prathamans according to their ingredients and normally used Jaggery in it for sweet. Coconut milk also put in it.

Paayasam

Sugared rice or noodles and milk, served as a sweet.
